Brown butter with habanero and caramalized lemon

Recently, I read about an Italian lady working to recreate recipes from her great great great grandmother’s diary. It was written in Alsatian (I never even knew that was a language, I thought it meant dogs, or GSDs in other words, but that is story for another time) sometime in the 1800s. Last year, we went to a beautiful town in Portugal called Tomar during a guided tour for Knights Templar. The lovely lady who was our guide took is to beautiful restaurant named Infante, where we had dishes recreated from 14th and 15th century Portuguese fare.

Moral of the story, whenever I want to recall a recipe, I should write it down.

I happened to create this lovely sauce (tons of inspiration from Simply Scratch and here Newtrition NewYou (I love these two blogs, please check them out), with a little twist of my own.

A butter sauce

Ingredients

Main Ingredients:

  • 1 butter stick
  • 3 pods garlic peeled, sliced and rested
  • 1 tbsp fresh parsley chopped
  • 4 red/orange habanero sliced
  • 1 large lemon sliced into rounds
  • 1 tsp sugar.

Instructions

  1. Heat the butter.
  2. As it melts, add garlic
  3. Saute it for five minutes.
  4. Wheh the foam starts subsiding, add the lemon rounds.
  5. Let them get slightly caramelized.
  6. add sugar.
  7. Now add the chopped habanero
  8. Once the lemon rounds take on a golden hue, add the parsley.
  9. pour the sauce in a bowl.
  10. Use it as a sauce for crispy fish or shrimps.
