Carrots are vegetables that are not easily consumed in my house. Thinking of ways to incorporate them in our menu has been a challenge of considerable proportion. This is possibly one recipe with which the poor carrots pass the tastebud test it’s put through. Simple and easy, who am I to complain.

Roasted carrots with lemon zest
Ingredients
- 10-12 carrots
- Olive oil
- Salt
- Pepper
- 1 lemon for zest
Instructions
- Preheat oven to 450 degrees
- Trim, peel and slice carrots diagonally ¾th of an inch in width
- Toss them in a bowl with salt and pepper
- Lay them flat on a baking tray
- Drizzle oil (I use olive)
- Bake for 25 minutes in upper rack
- Use a grater to zest lemon on the carrots before serving.
