I find myself heading back to my website more and more now a days. I’ve been wondering why I don’t post more often. Is it because I always want to personalize each thing I post? Could be.
I’ve realized that it has started to read more like a diary. As I curl up with some tea, it’s nostalgic to browse through years of musings, sometimes on a whim, sometimes on a fancy.
Much like this sauce I’m tossing my vegetables in currently and grilling them. Quick, easy and delicious.

Ingredients
- An assortment of vegetables (fills a large bowl)
- Mushrooms
- Peppers
- Broccoli
- Beans
For the sauce
- Extra virgin olive oil
- Crushed garlic - 4-5 pods
- Crushed green chilies (Thai) - 2 (optional)
- Brwon sugar - 2 Tbs
- Siracha - 2 Tbs
- 1 tsp sesame oil
- 1 tsp red chili flakes
- 2 tsp low sodium soy sauce
Instructions
- Preheat oven at 475 F
- Mix all the ingredients of the sauce in a large bowl
- Toss the cut vegetables and mushrooms
- Keep the broccoli florets medium
- Cube mushrooms (you can pick all kinds)
- Lay them out on a large grilling tray.
- Bake for 15-20 minutes
Notes:
- My oven’s Broil function is spectacular. I broil these in High for 8-10 minutes. But that’s my new oven, my previous one would have burnt it to cinders. So try it out with caution.
- I add extra pods of garlic around. Adds a zing.
